This pineapple margarita is the perfect balance of sweet and tangy flavors. This refreshing drink is refreshing and instantly transports me to memories of beach vacations.

Margaritas are one of my favorite cocktails.  So far I've shared fun flavors like SangriaWatermelon, and even a frozen strawberry version. This pineapple margarita just might be my new favorite. It has smooth tequila and has the perfect balance of sweet and sour. It will also transport your mind to the beach with its island flavors. It's hard not to dream of sandy beaches and long for the cozy comforts of a warm breeze during colder months. If you can't flee the cold weather to a tropical paradise, heat your soul with a boozy tropical tipple that lets your mind escape to paradise.

Ingredient Notes and Shopping Tips

  • Silver Tequila: Silver tequila, or Blanco, is aged for only a short amount of time (Usually 1-2 months). I like using it in this recipe as it has a mild flavor and is very affordable. Use leftovers in my tequila sunrises, Texas Margaritas or my Blue Margs.
  • Triple Sec: Triple sec is an orange-flavored liqueur that gets its flavor from dried, macerated orange peels. It is optional but encouraged as it adds a bright citrus note. 
  • Simple Syrup: Simple syrup is equal parts sugar and water combined. To make it, heat water to a boil and add an equal amount of sugar. Stir until fully dissolved, let cool, and voila! For this recipe, I used one cup of water and one cup of sugar.  Keep in the fridge for other cocktails for up to 2 weeks. 
  • Pineapple: Use fresh pineapple if it is in season. To find a good one give it a squeeze. It should be firm, but with a little give. Avoid super hard, or overly soft fruit. Drained canned pineapple can also be used.
  • Lime Juice: Freshly squeezed is best, avoid the store-bought version which can be too acidic.

Bartender Tips and Tricks

  1. Salt the Rim: To salt, the rim, rub a wedge of lime around the glass’s edge to make it slightly damp. Pour salt onto a plate and lightly tap the lime-covered rim until coated.
  2. Not a fan of salt? Use sugar instead!
  3. Pitcher: Make this recipe for a crowd by multiplying the ingredients by the number of people you're having.
  4. Adjust to taste: Add more or less simple syrup until you reach your desired level of sweetness.

Ingredients

  • 1 ½ Ounce Silver Tequila
  • ½ Ounce Triple Sec
  • 2 Slices Pineapple
  • ½ Tablespoon Butter
  • 1 Tablespoon Lime Juice
  • 3 Tablespoons Simple Syrup
  • ¾ Cup Cold Water
  • 1 Teaspoon Vanilla Extract
  • Crushed ice
  • Kosher Salt and Lime Wedges For Garnish If Desired

Instructions

  • Cut pineapple into 1 inch thick rings. Discard rind and remove the pulp.
  • Optional:Preheat grill pan with ½ tablespoon of butter. Grill for 4-5 minutes on each side, or until lightly charred. Cool completely.
  • In a blender combine tequila, triple sec, grilled pineapple, lime juice, simple syrup,water, and vanilla extract.
  • Blend until smooth.
  • Run a lime slice around the rim of the glass and dip in kosher salt.
  • Add some crushed ice to glasses. Pour in margarita.
  • Garnish with extra pineapple or lime wedges if desired.

  3. No blender? No problem! If you're not using a blender, muddle the pineapple and simple syrup before adding the rest. Doing so will release the fruit’s flavor properly. You could also make this a shaken cocktail using a cocktail shaker or mason jar.
  4. Pitcher: Make this recipe for a crowd by multiplying the ingredients by the number of people you're having. 
  5. Adjust to taste: Add more or less simple syrup until you reach your desired level of sweetness.
